Happy Diwali to all those celebrating the Indian – Hindu Festival of Lights. This is a celebration of new beginnings, and of the win of lightness over dark – good over evil.
We spread the joy with candles, fireworks, colourful rangoli patterns, and of course food. A part of the feast of course includes sweets.
This year I made Besan Burfi – Pistachio, Almond Sweet Bites made from a base of roasted chickpea flour.
They look a little like fudge – all golden brown.
But they are a crisper and firmer than fudge.
Mine are filled with crushed almonds and topped with pistachio nuts.
They are sweet, buttery and nutty.
The roasted chickpea flour (how versatile is the humble chickpea?) gives the nutty flavour and the crispy bite.
They will help you spread the light, joy and love this Diwali.
Or else, cook to experience the amazing warming waft of roasted chickpea flour throughout your house.
And share (or not) throughout the holiday season – whatever you are celebrating – and surprise everyone.
They are very easy to make and not hard to eat either.
My Besan Burfi Recipe:
– 4 cups gram flour (chickpea flour / besan)
– 250g unsalted butter
– 1 to 2 cups sugar (to taste)
Optional Ingredients (to taste):
– 8 cardamon pods (finely crushed)
– Handful of almonds (crushed)
– Handful of pistachios
1. Melt the butter in a pan
2. Add the chickpea flour, mix and allow to roast on a medium low heat for at least 20 -30 minutes. You will know when it’s ready when you can smell the nutty smell of the roasting flour around your house. The flour will turn a delicate golden brown.
3. Add the sugar, cardamom and almonds and mix.
4. Pour the mixture into a 1 inch deep tray (approx. 7 inches across), and allow to set. If a little runny – place in the fridge till hard.
5. Cut into bite size squares and enjoy.
